Winter in Kingston
Inspired by the winter spirit in Kingston, Oleks Lurchenko curated this winter spin on a Negroni to bring you warmth and coziness.
Ingredients
1oz Appleton Estate 8 Year Old Reserve
1 oz Campari
0.5oz Ancho Reyes
0.5oz Ginger-Cranberry Cordial*
2 drops Fee Brothers Whiskey Aged Bitters
Orange Wheel Cranberries Rosemary Sprig
Directions
- Combine all other ingredients to a cocktail shaker.
- Fill with ice and shake vigorously until chilled.
- Strain into a rocks glass over 1 large ice cube.
- Garnish with an orange wheel, cranberries and a rosemary sprig.
- Ginger-Cranberry Cordial: In a saucepan add 1 cup cranberries (100g), one 1” piece of ginger chopped, 1 cup water and ½ cup of sugar. Warm over medium heat, stirring to dissolve sugar. As the mixture comes to a boil, you will hear the cranberries pop. Once boiling, press cranberries to the bottom or side of the pan to help any that haven’t popped to release the flavours. Boil for 3-5mins then remove from heat. Let cool and then strain into a sealable container. Store any leftovers in the fridge.

Ingredients
1.5oz Appleton Estate 8 Year Old Reserve
1.5 oz Oat Milk
0.5oz Maple Syrup
3 heavy dashes Angostura Bitters
Soda Water
Garnish
Star Anise pod
Freshly grated nutmeg
Directions
- Combine Appleton Estate Rum, Oat Milk, Maple Syrup and Angostura Bitters with ice.
- Shake for 15 seconds until chilled.
- Strain into a Collins glass over fresh ice and top with soda water.
- Garnish with star anise and freshly grated nutmeg.

For those who fully embrace the holiday months, this Appleton Estate recipe curated by Skye Plowman highlights the flavour of the season, molasses.
Ingredients
2oz Appleton Estate 8 Year Old Reserve
0.5 oz Aperol
1oz Root Beer & Coffee Bean Syrup
2 dashes Orange Bitters
4 dashes Angostura bitters
1 orange wheel
Directions
- Combine Appleton Estate Rum, Aperol, Root Beer Syrup and Orange Bitters with ice.
- Stir thoroughly for 30+ seconds. Set aside.
- Place the orange wheel in a chilled coupe glass and soak with 4 dashes of Angostura Bitters.
- Strain the cocktail gently into glass over the orange wheel.
*Root Beer & Coffee Bean Syrup: Add one 500ml bottle of root beer and 10-12 coffee beans (intact or cracked but not ground) to a saucepan. Boil until reduced by two-thirds. One 500ml bottle will produce approx 175 ml of syrup. Store any leftover syrup in the fridge

Ingredients
2oz Appleton Estate 8 Year Old Reserve
0.5 oz Cynar
0.25oz Dry Vermouth
1 bar spoon Maraschino Liqueur
1 bar spoon Orange Liqueur
2 dashes Chocolate Bitters
Absinthe rinse
Garnish
Grapefruit Peel
Directions
- Few drops of Absinthe to a cocktail coupe – rinse and dump before setting aside.
- Combine all other ingredients to a mixing glass.
- Fill with ice and stir until chilled.
- Strain into prepared glass and garnish with a grapefruit peel.
