3 Easy ‘Boozy’ Popsicles

Making your own popsicles at home is always a great idea, and it can be especially fun to make frozen cocktails or spiked versions using a popsicle mold. These are just my three favourites that I think you’ll enjoy, but feel free to experiment on your own.

Alcohol Ratio When Freezing

There’s nothing wrong with a boozy popsicle if you’re looking to cool off on a hot summer day. But what you don’t want is a popsicle that turns into an alcoholic slushie. Here’s the secret: 1 part alcohol to 5 parts non-alcohol is the perfect ratio to ensure your cocktail stays perfectly shaped and holds its flavour while frozen.

Watermelon Mojito Popsicles

Ingredients

  • 3 cups chopped watermelon
  • 4 tbsp fresh lime juice
  • 1 tbsp roughly chopped mint
  • 1 cup light rum
  • 2 tbsp agave syrup
  • 1 3/4 cup club soda

Instructions

  • Place chopped watermelon in blender and process until watermelon is juiced (will be slightly pulpy).
  • Combine watermelon juice, lime juice, mint, agave syrup and rum in a shaker and shake well.
  • Fill popsicle mold 3/4 with mixture. Fill remaining popsicle mold with club soda and stir to combine.
  • Freeze for about 3 hours.

Tequila Lime Margarita Popsicles

Ingredients

  • 2 cans coconut milk
  • 1 tsp vanilla
  • 1/2 cup tequila
  • 1/4 cup Triple Sec
  • 2 tbsp lime juice
  • 2 tbsp of lime zest
  • 1/4 cup sweetened
  • shredded coconut
  • 3/4 cup simple syrup

Simple Syrup

  • 1 cup water
  • 3/4 cup sugar

Instructions

  • Boil water and add 3/4 of sugar. Stir until sugar has dissolved. Remove from heat and cool in refrigerator.

DIRECTIONS

  • Blend ingredients and pour into popsicle molds and try to be patient while they freeze!

Berry Vodka Popsicles

Ingredients

  • 1 cup frozen strawberries defrosted
  • 1/2 cup blueberries or
  • blackberries
  • 1/2 cup raspberries
  • juice of 2 lemons
  • 1 cup simple syrup above
  • 1 cup vodka
  • 2 cups of ginger ale

Instructions

  • Place the berries in a large bowl and mash together.
  • Add lemon juice, simple syrup, vodka, mix well.
  • Pour in ginger ale and stir until all the bubbles are gone.
  • Pour into molds, freeze and enjoy responsibly!
