Ingredients

  • 3 cups of flour
  • 2 cups of sugar
  • 2 teaspoons of baking powder
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • In another bowl
  • 2 eggs
  • 3/4 cup milk
  • 1/2 pound melted cold butter
  • 1 cup of mashed bananas
  • 1 chopped banana
  • 1 cup granola
  • 1 cup of diced walnuts
  • 1 cup of coconut

Instructions

  • Blend the dry ingredients to the batter. Hand blend the following into the mixture.
  • To get a wonderful crunchy crust and a great rise on these muffins, bake for 8 minutes at 425 degrees. Then reduce heat to 350 cooking for another 8-9 minutes.
